Product Information
All our products are gluten free and suitable for celiacs, also the wafers of nougat are with potato starch and therefore are suitable for consumption by celiacs.
Pernigotti uses only natural aromas in all its products
At the moment, our products are not Kosher certificated. Some of them contain milk so if you are vegetarian,please check the ingredient list to find the suitable product for you. At the moment, our products are not vegan certificated.
We do not use palm oil in any of our products and we we pay the highest attention in the care of our ingredients
All Pernigotti products may contain nuts as ingredients or trace. Peanuts is not present in any of our products. The warning "It may contain other nuts" informs that the product may contain trace of nuts because it is produced in the same production lines of products that contain nuts, so there is a risk of cross contamination, despite very accurate cleaning processes.
The separation of oil on the surface is a natural phenomenon in this type of product and is due to the high content of hazelnuts; this phenomenon can be accelerated by the preservation at too high temperature (above 22-24 ºC); it is enough to mix the cream to bring it back to its original condition.
In the spreadable cream can form small bubbles that are actually small crystals of cocoa butter that are naturally formed when you keep the product at low temperatures. It’s enough to keep the jar at room temperature for a few hours and mix to remove them.
The cocoa butter bloom is recognizable as a gray-white patina on the surface of the chocolate and depends on the chocolate’s exposure to too high temperatures for long periods. The optimal temperature for the storage of chocolate is between 18-21° C. If the chocolate is exposed to high temperatures, cocoa butter can melt and rise to the surface where it then re-solidifies giving rise to those gray streaks. Although they are not visually flawless, the products are still edible, but the flavor and texture could be compromised.
The sugar that blooms on chocolate is a phenomenon that arises when it is exposed to moisture (higher than 68% RH). Often, this result depends on having stored chocolate in an excessively humid environment. It can also occur when the chocolate is stored at a relatively cold temperature, such as in the refrigerator, and then is moved suddenly in a much warmer environment. This causes the formation of condensation on the surface of the chocolate and the melting of part of the sugar. The subsequent evaporation of moisture leaves the sugar crystals on the surface, giving the chocolate an opaque color.
Pernigotti uses skimmed milk powder, whole milk powder and other dairy ingredients in many of its chocolate products. Although some chocolates do not include milk and milk products in the recipe (for example, Gianduiotti), all production lines also process products with milk. For this reason, Pernigotti products are not suitable for lactose intolerant.

Store the chocolate well wrapped, away from strong odors, away from light, in a cool, dry place at a temperature between 16 and 20 ºC and 40 - 65 % humidity. If stored in proper conditions, our products will keep their freshness for many months.
